Hard-Cooked Eggs

Hard cooked eggs, or hard boiled eggs, is probably the easiest method to prepare eggs. But can everyone cook a perfect hard cooked eggs? We’ve all had experience with that unpleasant sulfur smell of a hard cooked egg. When your egg smells like that, it means you are not cooking it right and it is way overcooked.


Thanks to The America’s Test Kitchen Cooking School Cookbook, I can always cook a perfect hard cooked egg now.


The equipment needed are medium saucepan with lid, large bowl, liquid measuring cup and slotted spoon. Try it for yourself, and you will never cook hard cooked eggs any other way.


Hard Cooked Eggs

Cook Time: 15 minutes

Total Time: 15 minutes

Yield: Makes 4

Hard Cooked Eggs


  • 4 large eggs


  1. Place eggs in medium saucepan, cover with 1 inch water, and bring to boil over high heat.
  2. Remove pot from heat, cover, and let sit for 10 minutes.
  3. Meanwhile, fill medium bowl with 4 cups cold water and 4 cups ice cubes.
  4. Transfer eggs to ice bath with slotted spoon; let sit for 5 minutes. Peel eggs.



1. 把蛋放置於中型鍋中,加水蓋過大約三公分左右,大火加熱煮滾。
2. 水開了以後馬上關火,蓋上蓋子放置10分鐘。
3. 蛋在悶煮時,大碗中加入四杯冷水和四杯冰塊。
4. 將煮好的蛋放入冰水中冰鎮5分鐘後剝殻。
