Arugula Salad with Nectarine and Gorgonzola 芝麻菜油桃沙拉

Arugula has a peppery taste to it that I really like. With some sweet nectarine, creamy gorgonzola and a zesty dressing, you have a beautiful and tasty summer salad.

芝麻葉有一種特殊的味道,是我很喜歡的一種生菜,加上甜脆的油桃,濃烈的戈貢佐拉乳酪和微酸的沙拉醬,就是一盤美麗又美味的夏日沙拉。

I haven’t bought any prepared salad dressing ever since I discovered how easy it is to make your own dressing. All you need is vinegar, oil and some seasoning. You can create countless variety of dressing just with a few simple ingredients.

自從發現做沙拉醬有多簡單之後,已經很久很久沒有買過超市販售的沙拉醬,只要醋,油,和香料,就可以做出各種口味的沙拉醬。

When I had this salad for lunch, I kept on thinking “this tastes like $12 restaurant gourmet salad! And it’s so easy to make at home!!”

這是我昨天的午餐,吃的時候一直覺得”天啊好像餐廳賣的沙拉!原來在家這麼簡單就可以做出來。”

I prepared a lunch box for Dr. P. I packed the salad dressing separately. Only add dressing before eating otherwise the salad will become soggy. After lunch I got a text form Dr. P. “Wow” was what he said. :-D

幫公園先生準備了便當,沙拉醬分開來裝,要吃的時候再跟沙拉混合,這樣沙拉才不會變得軟趴趴,午餐之後他馬上傳了簡訊”WOW”過來,這盤沙拉大成功!

Arugula Salad with Nectarine and Gorgonzola

Yield: 4 servings

Ingredients

  • 7 oz arugula
  • 2 nectarine, cut into wedges
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled Gorgonzola
  • 1/4 cup toasted walnuts, chopped
  • 1 tablespoon red wine vinegar
  • 2 teaspoons Dijon mustard
  • 3 tablespoons olive oil
  • Salt and freshly ground black pepper

Instructions

  1. Arrange the arugula on a platter. Place the nectarine wedges around the platter. Scatter the sliced red onion, crumbled Gorgonzola, and walnuts over the salad.
  2. Whisk together the vinegar, mustard and olive oil. Adjust seasoning with salt and pepper. Dress the salad and serve.

芝麻菜油桃沙拉
(4人份)

7盎司芝麻葉
2個油桃,切片
1/4個紅洋蔥,切絲
1/4杯戈貢佐拉乳酪
1/4杯核桃,切碎
1大匙紅酒醋
2茶匙第戎芥末
3大匙橄欖油

現磨黑胡椒

  1. 將芝麻葉放在盤子上,擺上油桃,再撒上洋蔥,乳酪和核桃。
  2. 將醋,芥末和橄欖油一起攪拌均勻成沙拉醬,加上鹽和胡椒調味,與沙拉拌勻即可享用。
